Ingredients
1 cup sugar
1/2 cup vegetable oil
2 ripe bananas
1/2 cup sour cream
1 tsp vanilla extract
2 eggs
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp honey
2 cups fresh blueberries
1 tsp ground cinnamon
Preparation
Preheat oven to 350 degrees Fahrenheit.
Line your muffin pan with paper liners and set aside.
In a large bowl, mix the sugar and oil and set aside.
Peel the bananas and place them in a mixing bowl. Mash the bananas with a potato masher or a fork until they are mushy.
Add your mashed bananas, sour cream, vanilla, eggs, and honey to the bowl with sugar and oil. Mix until well combined.
In a separate bowl, combine the flour, baking soda, salt, and cinnamon. Stir until well combined.
Add the flour mixture to the banana mixture. Stir until combined. Don't over mix at this step. It should look lumpy.
In a small bowl, dust your blueberries with a little bit of flour. Stir until the blueberries are lightly coated.
Add the blueberries to your banana mixture. Gently fold them in to combine.
Spoon mixture evenly into the 12 muffin liners. An ice cream scoop works well for this step. Each liner will be roughly 3/4 full.
Bake the muffins at 350 degrees until golden brown, roughly 25-30 minutes.
