About the Recipe
A tasty, crunchy, and not too sweet homemade granola. This is not sticky sweet, but can be if you choose to add more honey.

Ingredients
1/4 cups coconut oil (melted)
3 cups rolled oats
1 tsp cinnamon (or more to your liking)
1/4 cup honey (or more to your liking)
1/2 cup whole cashews (or more to your liking)
1/4 cup shredded coconut (or more to your liking)
Preparation
Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
Microwave the coconut oil, 30 seconds to one minute, until fully melted.
Combine the coconut oil and rolled oats in a mixing bowl and stir until the oats are well coated.
Add the cinnamon, honey, and cashews and mix well until everything is well combined.
Spread the granola mixture onto the baking sheet in a single layer.
Bake roughly 30 minutes or until golden brown. Mix/stir about halfway through the baking time.
Remove from the oven and let cool.
Add any combination of nuts, dried fruit, or other toppings to the mixture and get creative! I love to add cocoa nibs for a slightly chocolatey and crunchy flavor without additional sugar.
