About the Recipe
This marmalade would be great on toast or biscuits, or try smearing it over a roasted pork tenderloin for a sweet and savory dish. It is very versatile.

Ingredients
7 Cara Cara oranges (~ 1 lb)
1 lemon
1/4 cup water
2 cups of sugar
Preparation
Cut off the ends of the oranges and the lemon. Chop the oranges and the lemon into quarters.
Place the fruit in a blender or food processor and blend until well processed and there is an even, slightly chunky consistency (like relish).
Put the pulp in a saucepan. Add the sugar and water; stir to combine.
Bring the mixture to a boil over medium to medium-high heat. Once boiling, reduce heat to low and continue to simmer the mixture for about 30 minutes.
Remove the pot from the heat, let cool for 5-10 minutes.
Spoon the marmalade into glass jars and loosely cover with a lid.
Let the marmalade cool to room temperature and store in refrigerator.
