About the Recipe

Perfect alternative to pumpkin pie, this sweet potato pie does not disappoint.

Ingredients

  • 1 unbaked pie crust

  • 1 can (~17 oz) sweet potatoes, drained

  • 1 cup evaporated milk

  • 2 eggs

  • 3/4 cup sugar

  • 2 teaspoons vanilla extract

Preparation

  1. Preheat oven to 425 degrees Fahrenheit.

  2. Combine the sweet potatoes, evaporated milk, eggs, sugar, and vanilla in a mixing bowl. Beat until thoroughly combined.

  3. Add the pie crust to a pie plate and fill with the batter.

  4. Bake at 425 for 15 minutes. Drop the temperature to 350 and continue baking approximately 45 minutes. The pie will be done when you can insert a toothpick in the center and remove it cleanly.

  5. Let the pie cool completely before serving.


This pie is delicious topped with whipped cream and Chipotle Pecans!
